A2 refers to a type of beta-casein protein in milk. Indigenous Indian breeds like the Gir cow produce predominantly A2 milk, while many high-yield crossbreeds produce A1. Our herd is Gir — so the milk, and this ghee, is A2 by breed, not by marketing.
The Bilona method matters just as much: culturing milk to curd and hand-churning it (rather than extracting fat from cream) is the traditional way, and it's what gives the ghee its grainy texture and deep aroma.
